Our wines
Here comes the proof that you can make high-quality Danish wine. Namely our various bottlings. We mainly make white wines and rosé wines. Both as table wines and sparkling wines..
Wine style
Our wines are generally dry wines and therefore very suitable to enjoy with good food. The wines have a distinct fruit character, where the grapes used are allowed to stand out. It produces the most interesting wines.
Some of the wines are fermented in steel tanks and glass balloons, while other wines are fermented in oak barrels. This gives very different types of wine, which can either be used individually for different bottlings – or in blends, depending on what is harvested in terms of quantities and degrees of maturity in each individual season.
We are still experimenting and every year we try to achieve even better wines than last year. Therefore, the different vintages are usually clearly different. However, we are gradually finding some 'signature wines' that we will try to repeat year after year.
Our vineyard is - due to its excellent location on Funen, close to the Great Belt coast (Denmark's orchard), and due to very careful pruning and care of the leaf walls to obtain maximum sun without shade - able to deliver very nice and ripe grapes almost every single year. This means that we do not need to manipulate the wine in the winery by adding extra sugar or reducing acid. This results in naturally balanced and tasty wines.
All the grapes for our wines are of course organic! During winemaking, only a carefully measured amount of sulfite is added to protect the wine from oxidation.
Reduced plastic consumption
In recent bottlings, we have aimed to avoid unnecessary decorative plastic. Caps and foil that are not important for the wine's storage have been removed.
From the start we decided not to make red wine, as it is difficult to make really tasty red wine with the blue grapes that have the opportunity to ripen in the Danish climate. Therefore, our blue grapes are mainly used for rosé wine. But since we also like a good red wine once in a while, we often make our rosé wines with a little longer maceration on the skins before pressing, and the wines are often fermented in oak barrels. This results in a very elegant and complex rosé wine that can easily be enjoyed with meat dishes, where you would otherwise have used a light red wine such as Pinot Noir.
In particularly good vintages, however, we also make a smaller batch of red wine. Simply to experiment with how close you can get to making an acceptable red wine. This red wine is also used as a starting point to make fortified port-type wine. In the future, we will hopefully develop some new grape varieties that can raise the level of Danish red wine.
In 2021, we took the leap from hobby to business and got the approval of the food authorities for our new winery. Therefore, only the wines from 2021 onwards are for sale. The older vintages are only for personal use and possibly wine tastings.

2023 Lot #4:"Solaris"
Full-bodied white wine from well-ripened grapes, which gives a complex and long taste.
A clean, vinous and fresh wine dominated by the aromas of the grape.
Produced in a steel tank. Alcohol: 13.8 vol.

2023 Lot #3:“Solaris Reserve”
Full-bodied and complex, spicy and aromatic white wine with classic fada aromas.
The wine is both fermented and matured in casks. Alcohol: 14.2 vol.
Gold medal: 2024 PIWI Wine Award International
2023 Lot #2:"Solaris Nature"
Late harvested, very ripe Solaris grapes – spontaneously fermented in a glass balloon.
A large, full-bodied and very complex wine, which approaches fortified wine, but with a dry sweetness in good balance.
The alcohol from the natural fermentation is well integrated. Alcohol: 16.0 vol.
The wine is bottled in a half bottle (37.5 cl).
2023 Lot #1:“The night is our own”
The Funen girls say that "the night is ours".
This is our own version of a so-called "Pet night".
It is a naturally sparkling wine.
The wine is fermented dry in the bottle - and cloudy because the yeast is still in the bottle.
The wine is refreshing with a seductive aroma of apple blossoms and citrus.
Perfect for summer days and bright nights.
No sulphite added, as the wine is protected by the yeast in the bottle.
2022 Lot #8:"Miss Sophie"
Sparkling rose wine at Bolero. The wine is bottle-fermented and aged for a minimum of 9 months on the lees. 9.5% vol alcohol and the wine is dry. Aroma of summer's red berries.
Goes well with chips for the "90th birthday" on TV or the New Year's menu as an exciting alternative to a light red wine. Cheers, Miss Sophie!
2022 Lot #7-2:"Lundeborg sea foam"
A beautiful and festive sparkling white wine that is aged for 15 months on the lees after bottle fermentation.
The wine is semi-dry. Aroma similar to Lundeborg Bølgebrus, but it is more rounded and sweet. A good glass before or after the meal, or perhaps with a bite of cheese?
It is the same wine as "Rådhusklokken", but has been aged longer on the yeast before bottling.
2022 Lot #7:"Town Hall Bell"
A beautiful and festive sparkling white wine on a blend of Solaris, Souvignier Gris, Hibernal, Johanniter and Vilaris. The wine is bottle-fermented and aged for a minimum of 9 months on the lees. 11.7% vol. Alcohol. The wine is semi-dry. Aroma similar to the Queen, but it is more rounded and sweet.
With a little more sweetness, it goes better with the wreath cake when the clock strikes midnight.Happy New Year!
2022 Lot #6-2:"Lundeborg Bølgebrus"
A beautiful and festive sparkling white wine that is aged for 15 months on the lees after bottle fermentation.
The wine is dry. It is a fresh fruity sparkling wine with good acidity. A good glass for summer brunch, appetizers or just when the occasion calls for it.
It is the same wine as "Dronningen", but has had longer aging on the yeast before bottling.
2022 Lot #6:"The Queen"
A beautiful and festive sparkling white wine on a blend of Solaris, Souvignier Gris, Hibernal, Johanniter and Vilaris. The wine is bottle-fermented and aged for a minimum of 9 months on the lees. 11.7% vol. Alcohol. The wine is dry. It is a fresh fruity sparkling wine with good acidity that goes well as a welcome drink and canapés during the Queen's New Year's speech.
2022 Lot #5: “The red loading gate”
A sweet and full-bodied red wine, but with a Nordic lightness and fruity character. It is made from the Triomph d'Alsace grape. Fermented for a few days with skin contact, after which alcohol is added. It is aged for one year in a small converted port wine cask. The wine is suitable both for desserts or to be enjoyed alone.
2022 Lot #4: “The white loading gate”
A sweet and full-bodied white fortified wine, but with a Nordic lightness and fruity, floral and spicy character. It is made from the Solaris grape. Fermented for a few days with skin contact, after which alcohol is added and the wine is aged for a year in a small cask (French oak). The wine is suitable both for desserts and to be enjoyed alone. OUT OF STOCK
2022 Lot #2: “Solaris Reservé”
The new bottling of a wine corresponding to 2021-4.
A rich and complex white wine that is fermented in oak barrels.
The wine is made from 100% solaris. Smell and taste of apple, citrus, flowers, melon and vanilla. A dry wine with fresh tangy acidity. A wine that goes well with food.
Should be enjoyed chilled due to its relatively high alcohol content. OUT OF STOCK
2022 Lot #1: “Cuvée Cottage”
The new bottling of a wine corresponding to 2021-2.
A fresh and flower-scented white wine that has not been aged in oak barrels.
The wine is a blend of 50% solaris and 50% muscaris.
2021 Lot #8:"The Barn Gate"
A sweet and full-bodied fortified wine, but with a Nordic lightness and fruity character. It is aged for one year in a small converted port wine cask. The wine is suitable both for desserts or to be enjoyed alone. The wine is bottled in a half bottle (37.5 cl) with a screw cap, so it is better suited to a smaller company. OUT OF STOCK

2021 Lot #1:“Nordic Nouveau Red”
A sparkling red wine made with a. carbonation maceration (just like Beaujolais Nouveau) followed by a quick second fermentation in the bottle (methode traditionale), so that the wine could be ready for New Year 2021. Due to Corona, it was cancelled, and it has now been stored for a year and matured nicely. The wine is semi-dry and works well with food as a red wine with a twist. OUT OF STOCK
Sale of the wines
Most of the wines can be bought at the restaurant "Den Gule Cottage", Klampenborg (link),
at the "Malt & Grape" wine bar, Aabenraa (link), as well as in Byens Gårdbutik, Svendborg (link).
In addition, all available wines can be bought on our shelf at Købmanden in Lundeborg" (link)
or in connection with the purchase of organic lamb on the farm.
